Ingredients

  • 2 tbsp coconut oil, extra virgin if preferred
  • 75 g oatmeal
  • 50 g walnuts
  • 50 g dried cranberries, preferably sweetened with apple juice
  • 1 banana
  • 1 tsp honey

Instructions

  1. preheat oven, 180 °C / 350 °F.
  2. in a pan, melt coconut oil.
  3. mix remaining ingredients in food processor until just combined.
  4. add melted coconut oil & a pinch of salt, plus a hint of cinnamon if you like.
  5. divide batter into 12 portions, shape with hands, place onto baking sheet or on a grid lined with baking paper.
  6. bake cookies until golden crispy, about 25 minutes.
    • tips: flip & turn cookies over once when halfway through bake time.
