Vegan quinoa pancakes

vegan pancakes made with quinoa flour. gluten free, naturally!

Ingredients

Scale
  • 100 g quinoa flour
  • 1 tsp baking powder
  • 1/2 banana
  • 160 ml almond milk
  • coconut oil for frying

Instructions

  1. in a bowl, mix quinoa flour, baking powder, & a pinch of salt.
  2. puree banana with almond milk, & pour into flour. mix until nice & smooth.
  3. in a frying pan, heat coconut oil in pan, pour batter in spiral circles onto pan. bake both sides until golden brown.
  4. decorate pancake with colorful tangy sweet fresh fruits.
  5. prepare maple syrup in a small ramekin on the side, or, pour it on, as you wish!
