Beetroot spread

fresh & smooth vegetable spread with soft goat cheese.

Ingredients

Scale
  • 500 g boiled beets
  • 200 g soft goat cheese
  • 12 tbsp lemon juice
  • 1 tbsp honey
  • freshly ground salt & pepper

Garnish:

  • pine nuts
  • cress

Instructions

  1. cut off the ends of beets, cut into pieces.
  2. in a mixing bowl, put beets, goat cheese, lemon juice, & honey, use a food processor or hand-mixer, blend until smooth.
  3. season with salt & pepper.
  4. use spread on bread, cracker, or pancake.
  5. garnish with cress, pine nuts, some freshly grated salt & pepper. Enjoy!
