Coconut macaroons

Ingredients

Scale
  • 100 g coconut grater
  • 20 g rice flour
  • 40 g coconut oil
  • 1 tbsp (full of) agave/rice syrup
  • 2 egg white
  • 2 tbsp vegetable milk

Instructions

  1. preheat oven, 180 °C / 355 °F.
  2. add coconut grater and rice flour to bowl.
  3. melt coconut oil, mix with agave syrup, add to dry ingredients, mix evenly.
  4. in a clean bowl, beat egg white until stiff & puffy, gently fold into coconut mixture.
  5. finish with tablespoon of milk, scoop to mix thoroughly.
  6. line bake tray with parchment paper.
  7. to shape half balls: scoop enough mixture with small tablespoon, gently level mixture by applying pressure, invert spoon to transfer mixture onto bake tray.
  8. bake cookies in preheated oven, about 15-20 minutes.
  9. remove promptly & let cool.
