Mediterranean salad with quinoa

Ingredients

For the salad:

  • 100 grams cooked quinoa
  • 2 large hands arugula
  • 6 mint leaves
  • 1 orange
  • 1/2 avocado
  • 25 grams soft goat cheese
  • 2 tbsp pomegranate seeds

For the dressing:

  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • ½ tbsp honey
  • pepper and salt

Instructions

  1. cook quinoa according to package directions. allow cool down.
  2. in a large bowl, combine arugula, minced mint leaves & cooked quinoa.
  3. peel orange into flesh, & break into smaller pieces. Cut avocado into cubes.
  4. decorate salad with avocado & orange.
  5. sprinkle crumbled goat cheese & pomegranate seeds over salad.
  6. beat to mix all dressing ingredients well, pour over salad.
