Granola with oatmeal & nuts

crunchy & chunky granola, GLUTEN FREE.

Ingredients

Scale
  • 150 g oatmeal
  • 20 g flax seed
  • 2 tsp cinnamon
  • 1 tsp gingerbread spices
  • 115 g nuts (my combination: almonds, hazelnuts, pecans, & walnuts)
  • 75 g honey, or maple syrup, or both! 😀
  • 30 g coconut oil
  • 1 egg white

Instructions

  1. preheat oven, 150 °C / 300 °F.
  2. in a bowl, weigh oatmeal, flax seed, cinnamon, spices, & nuts, mix well.
  3. in a sauce pan, melt & stir to combine coconut oil, honey &/or maple syrup, low heat.
  4. remove sauce from heat when ready.
  5. slowly, mix & stir liquid into dry ingredients, mixture become semi dry.
  6. in another (clean!) bowl, beat egg white until stiff & puffy.
  7. spoon just enough amount of beaten egg whites into granola, mix gentle & briefly, try to keep chunky size when mixing.
  8. spread granola chunks onto parchment-lined baking sheet, careful not to break chunks.
  9. bake until crispy brown, about 15-20 minutes.
  10. while baking, use spoon to push & flip granola 1~2 times gently, do not break chunks.
  11. remove from oven when done, allow granola to cool down completely on bake tray.
  12. store in jar.
