Coconut balls

Amazing coconut balls with a crunchy almond inside.

Ingredients

  • 55 g coconut oil
  • 50 g shredded coconut, for mixing
  • 20 g extra shredded coconut, for exterior decoration
  • 20 g honey
  • 1/2 tsp vanilla powder, or vanilla essence
  • 15 blanched almonds

Instructions

  1. melt coconut oil in a saucer.
  2. in a bowl, mix shredded coconut, honey, & vanilla, then add melted coconut oil, stir well.
  3. refrigerate mixture in the bowl, 15 minutes.
  4. prepare 2 small bowls, 1 for shredded coconut, another for blanched almonds.
  5. take a teaspoon of the mixture, push an almond in & form a nice ball.
    • using fingertips for pushing & shaping for best results.
  6. roll balls in shredded coconut, place onto a dish or baking paper.
  7. repeat steps 5 & 6 until finish.
  8. refrigerate coconut balls for 15~20 minutes, until firmer, I know, it’s hard to wait…!.
