in a bowl, mix oat flour, oat flakes, baking powder, coconut blossom sugar, salt, coconut, & add cold cubes of butter. press pulse mode on food processor several times until a crumbly dough forms.
separate about 200 g of dough mixture aside for later use.
mix 2 eggs with dough mixture from step 2.
line a medium cake tin or low pie tin with baking paper, grease edges.
spread dough thinly over bottom. wet back side of a spoon to smooth out dough.
spread fruits on top of dough mixture.
use dough mixture from step 3 to cover fruits.
bake cake until golden brown & done, about 30~40 minutes.
If your cake is a bit higher, bake time will be a bit longer. Check by inserting a skewer into center of cake for doneness, if skewer comes out dry, it’s done.
