Oatmeal zucchini pancakes

Ingredients

Scale
  • 6 eggs
  • 150 g oatmeal or oatmeal flour
  • 500 g zucchini, peeled & diced

Instructions

  1. add eggs & zucchini to food processor, mix until combined.
  2. add oatmeal or oatmeal-flour, mix again. ***when using oatmeal, batter will be slightly coarser than with flour.
  3. melt a teaspoon of coconut oil in a hot pan, allow oil to warm up.
  4. pour in some batter. The batter will be a bit thicker, spread it out with spatula to make a large, thin pancake.
  5. Bake pancake until golden brown on both sides.
  6. repeat to finish batter.

Notes

For topping, use maple, date, or pear syrup. this pancake can also be used as a wrap for savory fillings.
