Puffed rice granola

Ingredients

  • 20 g hazelnuts
  • 30 g pumpkin seeds
  • 20 g sunflower seeds
  • 2 tbsp coconut oil
  • 1 tbsp honey
  • 60 g puffed rice
  • 0.5 tsp cinnamon powder

Instructions

  1. preheat oven, 160 °C / 320 °F.
  2. chop hazelnuts in halves.
  3. line baking tray with parchment paper, spread out seeds, include hazelnuts if using un-roasted.
  4. roast seeds for 5 minutes.
  5. in a sauce pan, melt coconut oil & honey, combine well.
  6. in a bowl, weigh rice puffs, add cinnamon powder.
  7. combine roasted seeds & oil mixture, stir to blend thoroughly.
  8. spread granola over bake tray, bake about 10-12 minutes until crispy brown.
  9. allow to cool down for 15 minutes.
  10. enjoy!

Notes

tastes especially good with vegetable milk or yogurt.
