Spicy pumpkin spread

Ingredients

Scale
  • 200 g pumpkin
  • olive oil
  • 100 g cashew nuts
  • 1 tsp cinnamon
  • 1/2 tsp rosemary
  • salt & pepper to taste

Instructions

  1. preheat oven, 200 ºC / 390 ºF.
  2. peel & cut pumpkin into small cubes, add to oven dish.
  3. sprinkle with olive oil.
  4. bake to soften pumpkin, about 15~20 minutes.
  5. remove pumpkin from oven, let cool.
  6. mix cashew nuts in food processor until clumps.
  7. add pumpkin, cinnamon, rosemary, salt & pepper, mix until smooth.

Notes

properly refrigerate spread in sealed jar up to 7 days.
