I often find myself in different phases: the smoothies phase, the homemade granolas phase, and now… i’m into the homemade spreads phase!
as the jars from supermarket with unknown ingredients became lesser attractive, i figured fresh homemade spreads shouldn’t be too complicated! if i made more than i can finish within a single use, i can alway store in the freezer, or, make my neighbors happy!
Beetroot spread
fresh & smooth vegetable spread with soft goat cheese.

Ingredients

- 500 g boiled beets
- 200 g soft goat cheese
- 1–2 tbsp lemon juice
- 1 tbsp honey
- freshly ground salt & pepper
Garnish:
- pine nuts
- cress
Instructions
- cut off the ends of beets, cut into pieces.
- in a mixing bowl, put beets, goat cheese, lemon juice, & honey, use a food processor or hand-mixer, blend until smooth.
- season with salt & pepper.
- use spread on bread, cracker, or pancake.
- garnish with cress, pine nuts, some freshly grated salt & pepper. Enjoy!
