- 100 g coconut grater
- 20 g rice flour
- 40 g coconut oil
- 1 tbsp (full of) agave/rice syrup
- 2 egg white
- 2 tbsp vegetable milk

Instructions
- preheat oven, 180 °C / 355 °F.
- add coconut grater and rice flour to bowl.
- melt coconut oil, mix with agave syrup, add to dry ingredients, mix evenly.
- in a clean bowl, beat egg white until stiff & puffy, gently fold into coconut mixture.
- finish with tablespoon of milk, scoop to mix thoroughly.
- line bake tray with parchment paper.
- to shape half balls: scoop enough mixture with small tablespoon, gently level mixture by applying pressure, invert spoon to transfer mixture onto bake tray.
- bake cookies in preheated oven, about 15-20 minutes.
- remove promptly & let cool.
