1. I love your homemade gingerbread cookies, the one that has no refined sugar & gluten free, they were really good, my wife liked it too.
2. i’m trying to control my cholesterol, so no more dairy milk please.

Gluten free gingerbread cookies
as per your request, dear Santa sir, gingerbread cookies, gluten & refined sugar free.
- Prep Time: 25 minutes
- Cook Time: 45 minutes
- Total Time: 1 hour 10 minutes
Ingredients

- 80 g maple syrup or honey
- 1 tbsp almond milk
- 1 tbsp (25 g) coconut oil or butter
- 150 g almond flour
- 1/2 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground cardamom *
- 1/4 tsp ground nutmeg
- 1/2 tsp baking powder
Instructions
- in a pan, heat syrup, almond milk & coconut oil until oil melted.
- In a bowl, combine almond flour, cinnamon, ginger, cardamom, nutmeg, & baking powder.
- Pour oil mixture into dry ingredients, knead into a cohesive dough ball. The dough should be a bit sticky due to syrup. refrigerate dough for 30 minutes.
- preheat oven, 175 °C / 350 °F.
- line bake tray with parchment paper.
- Remove dough from refrigerator, place dough between two sheets of bake paper, roll out dough, remove top paper.
- cut into happy shapes, bake cookies until nicely brown & done, about 10~15 minutes.
- allow cookies to cool down & become firm.
- serve on a nice plate for Dear Santa, don’t forget his favorite non-dairy beverage.
- of course, you may have some too.
Notes
No ground cardamom at home but only cardamom pods? Bruise them, collect the black seeds from the pods & grind them in a mortar. Voila!
