a whole new definition for cookie lovers: Crispy and healthy!

Ingredients

- 1 tbsp chia seeds
- 80 g oatmeal
- 50 g oatmeal flour
- 1 tsp sesame seed
- 1 tsp sunflower seeds
- 1 tsp flaxseed
- 60 ml rice oil (or melted coconut oil)
- 40 g honey

Instructions
- preheat oven, 170 ºC / 340 ºF.
- add chia seeds, 1.5 tablespoons of water in cup. allow chia seeds to fully absorb water, 10 minutes.
- mix dry ingredients in bowl: oatmeal, oatmeal flour, sesame seeds, sunflower seeds, & flaxseed.
- add oil, honey, & chia seeds, mix well.
- line bake pan with parchment paper.
- divide batter into 8 ~ 10 piles, about 1 tablespoon per cookie.
- press to shape cookie with fingers or convex side of spoon
- tips: you may use cookie ring or molds to help with shaping.
- bake cookies until golden crispy, 20 to 25 minutes.
- let cool on rack.
Notes
you may add chopped mulberries, or replace honey with maple syrup or rice syrup to make it absolutely vegan.
