- preheat oven, 180 °C / 350 °F.
- in a pan, melt coconut oil.
- mix remaining ingredients in food processor until just combined.
- add melted coconut oil & a pinch of salt, plus a hint of cinnamon if you like.
- divide batter into 12 portions, shape with hands, place onto baking sheet or on a grid lined with baking paper.
- bake cookies until golden crispy, about 25 minutes.
- tips: flip & turn cookies over once when halfway through bake time.
