this salad fits the profile so well, mediterranean style, with quinoa, goat cheese, pomegranate, and… HAPPY!
Mediterranean salad with quinoa

For the salad:
- 100 grams cooked quinoa
- 2 large hands arugula
- 6 mint leaves
- 1 orange
- 1/2 avocado
- 25 grams soft goat cheese
- 2 tbsp pomegranate seeds
For the dressing:
- 1 tbsp lemon juice
- 1 tbsp olive oil
- ½ tbsp honey
- pepper and salt
Instructions
- cook quinoa according to package directions. allow cool down.
- in a large bowl, combine arugula, minced mint leaves & cooked quinoa.
- peel orange into flesh, & break into smaller pieces. Cut avocado into cubes.
- decorate salad with avocado & orange.
- sprinkle crumbled goat cheese & pomegranate seeds over salad.
- beat to mix all dressing ingredients well, pour over salad.
