a shout out for my dear sister-in-law, whenever there’s a birthday party in the family, she’ll makes this insanely tasty oatmeal cake with the insanely amount of summer fruits, and i, will became the little girl dancing in the kitchen.
Oatmeal cake with summer fruit
Fruity oatmeal cake, sweetened naturally.

Ingredients

- 250 g oat flour
- 50 g oat flakes
- 8 g baking powder
- 100 g coconut blossom sugar
- pinch of salt
- 75 g grated coconut
- 200 g cold vegan butter, cubed
- 2 eggs, beaten
- 500 g summer fruits, fresh or frozen
Instructions
- preheat oven, 180 °C / 355 °F.
- in a bowl, mix oat flour, oat flakes, baking powder, coconut blossom sugar, salt, coconut, & add cold cubes of butter. press pulse mode on food processor several times until a crumbly dough forms.
- separate about 200 g of dough mixture aside for later use.
- mix 2 eggs with dough mixture from step 2.
- line a medium cake tin or low pie tin with baking paper, grease edges.
- spread dough thinly over bottom. wet back side of a spoon to smooth out dough.
- spread fruits on top of dough mixture.
- use dough mixture from step 3 to cover fruits.
- bake cake until golden brown & done, about 30~40 minutes.
- If your cake is a bit higher, bake time will be a bit longer. Check by inserting a skewer into center of cake for doneness, if skewer comes out dry, it’s done.
- get your tea or coffee ready, this cake taste even better while lukewarm!
