Red quinoa salad with grapes and feta
“A Crunchy & Chewy Salad”! with red quinoa, grapes, & feta.

Ingredients

- 4 tbsp olive oil
- 50 g oat flakes
- 2 tbsp balsamic vinegar
- 175 g red quinoa
- 1 small head of romaine lettuce
- 150 g seedless red grapes
- 150 g seedless white grapes
- black olives
- 100 g feta
Instructions
- in a pan, heat 2 tablespoons of olive oil, stir fry oat flakes until golden brown.
- pour 1 tablespoon of balsamic vinegar & salt & freshly ground pepper sparingly. Stir well until all moisture evaporated.
- tips: oat flakes gets burned very fast, be watchful & remove pan from heat & empty onto a plate quickly to avoid continual heat overheating oat flakes. allow to cool on plate.
- in a frying pan, heat 2 tablespoons olive oil & stir fry quinoa for 2 minutes.
- pour 1 tablespoon of balsamic vinegar, add 350 ml water, & some salt. cover pan & let quinoa simmer, about 8 minutes.
- remove lid, turn heat to high temperature, continue stirring until all moisture evaporated, quinoas should look “partially popped”. let quinoa cool to lukewarm or completely.
- mix quinoa, sliced lettuce, halved grapes, olives, & feta cubes on a large plaid.
- sprinkle extra oil & balsamic vinegar on salad to like.
- finally, sprinkle oat flakes over the salad.
