they taste so much better than the store sold granolas which are usually “loooaded” with sugar. And when labeled “Gluten Free”, the price goes up, but freshness…? meh…! try this crunchy variation once, be prepared to fall in love with it again & again.

- 75 g oat flakes
- 75 g white quinoa
- 25 g coconut grater
- 1 tbsp coconut oil
- 1.5 tbsp honey
- 0.5 tsp cinnamon
- 20 g raisins
- 20 g figs, cut into pieces

Instructions
- preheat oven, 170 ºC / 340 ºF.
- measure oat flakes, quinoa, coconut grater, put in large bowl.
- melt coconut oil in pan, low heat, when melted, turn off heat.
- add honey & cinnamon to melted coconut oil, stir well.
- pour oil mixture onto dry ingredients, stir well.
- line bake tray with parchment paper,
- spread granola onto parchment paper.
- bake granola until nicely brown & crispy, about 10 minutes.
- weigh raisins & cut dried figs into pieces.
- when granola is ready, remove from oven, add raisins & figs instantly, stir to mix quickly.
- allow granola to cool down completely, store in airtight jar.
- enjoy your breakfast!
- serve with vegan yogurt or goat yogurt, if you like!
Notes
replace quinoa with amaranth to surprise yourself.
