- 200 g pumpkin
- olive oil
- 100 g cashew nuts
- 1 tsp cinnamon
- 1/2 tsp rosemary
- salt & pepper to taste

Instructions
- preheat oven, 200 ºC / 390 ºF.
- peel & cut pumpkin into small cubes, add to oven dish.
- sprinkle with olive oil.
- bake to soften pumpkin, about 15~20 minutes.
- remove pumpkin from oven, let cool.
- mix cashew nuts in food processor until clumps.
- add pumpkin, cinnamon, rosemary, salt & pepper, mix until smooth.
Notes
properly refrigerate spread in sealed jar up to 7 days.
